One, one and one....

These are those recipes that you need in your back pocket for guests or gifts that need to have been made... um... yesterday.

We call them:

One, One, One cookies.
1 cup peanut butter (homemade, crunchy, natural, smooth... whatever).
1 cup sugar (raw, brown, white... again... whatever)
1 egg (don't forget this ingredient... see story below)

There are three main ingredients and a bunch of add-in potential.

I added about a 1/4 cup of milled flax seed and about a 3/4 cup of chocolate chips... yum!


I made these for a dear friend, and proudly pregnant-about-to-pop Mama, and forgot to add the egg. The result was tasty but, more like um, moonsand. Though... Sandier. Did you know egg was a binder? Ahem.

So a pan of rice krispy treats saved the day. Another 3 ingredient wonder!

might I know that pregnant, about-to-pop mama? :) I would LOVE those cookies, and love them even more bc they are easy! but...my dear daughter has a peanut allergy. huge bummer...

Hey... I bet you could use almond butter. A bunch of roasted almonds and a little bland oil in the food processor until the consistancy of natural p-nut butter. (If she's not allergic to almonds) or how bout nutella (if she's not allergic to hazelnuts).
